Giuseppe is a machine learning platform that analyzes molecular structures of animal products and recommends plant-based ingredient combinations to replicate taste and texture. The technology is proprietary but the output — plant-based milk, mayo, burgers — is functionally identical to what Nestlé, Unilever, and Danone launched using internal R&D at a fraction of the cost. NotCo's technical advantage was being first to market in Latin America, not having better AI.
